Papillon 11 
Our single rose from 2011. Pressed in our small basket press (300L) then settled before running 70% to old barrel’s for fermentation with selected yeasts at ambient cellar temperatures. 30% fermented in a stainless tank at cooler temps, then assimilated as one wine while last of sugars were still ticking. A small component of fermenting syrah juice (4%) was added late in the vintage to extend fermentation and balance the blend. Left on lees in single large tank until fining with clay and sterile filtration.
