This wine represents a quantum shift in terms of style. Here, I am investigating whole bunch dynamics with only a light foot treading and an almost entirely untouched method. The wine relies on indigenous micro flora and bottled with no adjustments, fining or filtration. We have given only a very slight sulphite addition to retain freshness as it travels to you. The aromatic side of this wine displays the influence of whole bunch ferment quite clearly with an array of exotic scents including cedar wood, musk, raspberry, smoked meat and anise. The beauty in this wine is that these aromas are purely grape derived. The chalky structure is obvious and it carries long, like liquorice on the palate.
