This is the first look we have offered of the Pinot Noir grown at lime gully vineyard in Longbush north of Martinborough village at higher altitude and residing on an oyster fossil rich soil. The place inspires me both for what it is now and for what it signals for the future of our region. Its a place grounded in sustainable living and harmonious farming systems. The wine making is simple, left to ferment wild, mostly destemmed fruit but enough whole cluster for complexity and structure, pressed in our basket press and aged in neutral oak for the best part of the year bottled without filtration or fining and no additives used. Forgive its youthful tension it will repay some patient cellar time or serve with something like carpaccio of Venison and think of the native forest that borders this property next to a meandering stream where wild Deer often roam.
